If there is one thing all women can agree on it\u2019s that mealtime can get monotonous. Shopping for, cooking, and serving the same dishes week after week gets boring, and is often met with less than enthusiastic approval.<\/p>\n

The key to solving this issue is some good meal inspo. That\u2019s just what Becky delivers in her new book, BOWLS!<\/em><\/p>\n

Not only are Becky\u2019s dishes amazingly delicious looking (her photos are seriously drool-worthy), but come with a nifty approach. Create a satisfying one dish meal with fresh, healthy foods that you have on hand.<\/p>\n

Superfood Salad<\/strong><\/p>\n

Ingredients for 4 Servings<\/p>\n

1 cup quinoa
\n2 cups water
\n2 cups kale, chopped into bite-sized pieces
\nJuice of 1 lemon
\n\u00bc cup olive oil
\n\u00bd teaspoon salt
\n1 cup pomegranate seeds
\n1 Haas avocado, chopped
\n\u00bd cup red onion, minced
\n\u00bc cup additional olive oil<\/p>\n

1. Cook the quinoa in the water. You can do this in your rice
\ncooker or on the stove. To cook quinoa on the stove, put the
\nquinoa and water in a 2 quart pot and bring to a boil. Lower the
\nheat and simmer for 15 minutes. When the quinoa is cooked,
\ntransfer to the large bowl that you\u2019ll be serving your salad in.<\/p>\n

2. Meanwhile in a separate bowl, combine the kale, lemon juice,
\nolive oil, and salt. Get in there with your hands and massage
\nthe kale so it\u2019s well coated, and set it aside to wilt for at least
\n10 minutes.<\/p>\n

3. When the quinoa has cooled, transfer the kale mixture,
\npomegranate seeds, avocado, onion, and additional olive
\noil to the bowl with the quinoa, and toss well. You can serve
\nimmediately or make this salad a day ahead and refrigerate
\novernight.<\/p><\/blockquote>\n
