Forks Over Knives
Forks Over Knives is the research compilation of Dr. T. Colin Campbell and Dr. Caldwell Esselstyn. These two experts have dedicated decades to researching the concept of a whole foods plant-based diet being beneficial to our health over a diet that includes meat and dairy. By simply changing the way you eat, you can reverse and prevent many of the major diseases our country battles today, including heart disease and many cancers. Ok, so maybe eliminating meat, dairy, oils, and refined sugars isn’t so easy for many of us, but in the name of good health it is a small price to pay.
And pay it does. The patients these doctors and their colleagues treated not only lowered their high cholesterol, blood pressure, blood sugar and weight numbers, but the cost of their health care too. No diabetes or hypertension = no prescription fix.
Another area of concern is our children. Kids these days are eating more and more process foods and less whole foods. This is causing an alarming hike in obesity and type 2 diabetes amongst youngsters.
